Wattleseed Muffins with White Chocolate Chips
Are you ready for another ‘true-Aussie’ recipe? Last year, I posted a recipe for Quandong Pie, featuring the ‘Australian native peach.’ Interestingly enough, this recipe has become one of my most popular posts.
Today’s recipe is Wattleseed Muffins with White Chocolate Chips. Wattle seeds are another Australian native food- also known as bush tucker. They come from Acacia trees that produce edible pods that can be roasted and ground into a fine or coarse powder. They produce a delicious nutty, chocolatey taste with a hint of coffee- a great addition to breads, granola and stews. They are also very nutritious, containing twice the protein of wheat flour. Did you know that Qantas airlines even featured ‘Wattleseed Ice Cream‘ on their flight menu?
Acacias have a special significance for Australians, as the blossom of the golden wattle has been adopted as the nation’s floral emblem. However, you have to be careful when eating the seeds of acacia trees- there are at least 700 varieties of acacias and many are poisonous! Luckily, I was able to buy my ground wattle seeds at a specialty store in Adelaide.

It’s interesting to note that even Prince Harry and his wife, Meghan Markle were recently given an opportunity to smell and taste various native Australian foods when they visited a Melbourne restaurant. Evidently, she refused to taste native ‘finger limes’, but enjoyed the aroma of saltbush and admitted she has even cooked with wattle seed herself!

My recipe for Wattleseed Muffins with White Chocolate Chips is relatively easy and only takes about 15 minutes or less to bake. I had some Hazelnut Crumb left over from my Chocolate Mousse Cake, so I sprinkled some of that on top of my healthy but delicious muffins! This recipe was adapted by Neville Bonney’s recipe, as printed in his book Edible Wild Native Plants.
Death By Chocolate Muffins
They’re jam-packed, overflowing, and absolutely EXPLODING with chocolate.
Thus the reason why I called them Death By Chocolate Muffins rather than just Chocolate Muffins. You see, these muffins don’t just have three times the chocolate. Not even four…they have FIVE times the chocolate.
Well allow me to go into detail…
Starting with the batter itself, not only is cocoa powder added, but hot chocolate powder is added as well. The hot chocolate powder might sound like an odd or redundant ingredient to incorporate into the batter, but I just figured it couldn’t hurt. If anything, it would just add more sweetness and intensify the cocoa flavor.
Another ingredient worth mentioning is the instant espresso powder. I use this ingredient almost all the time when it comes to chocolate desserts. It just adds a deeper richness to chocolate, making the overall flavor even more intense. A little goes a long way too! Only a teaspoon is added to the batter. Just enough to enhance the chocolate, yet not too much to actually notice any real coffee flavor.
Once the batter is all combined, the chocolate chips get folded in. I went with two different kinds–semi-sweet and milk chocolate. Although if you want to get technical, I used three different kinds of chips since I used both mini and regular-sized semi-sweet chocolate chips. I just like having a variety of different-sized chips in muffins. The mini chips spread throughout the batter more evenly, but the regular chips give you larger pockets of melty chocolatey goodness.
While there might be enough chocolate in the muffin batter itself, I of course couldn’t help myself. I mean, if you’re going to call these “Death By Chocolate Muffins” they have to be at least a little over-the-top, don’t ya think?
Because why NOT stuff a dollop of Nutella into the center of an already chocolate-engorged muffin?
Sounds like the best idea ever, doesn’t it?
To stuff the muffins, all I did was scoop about 2 Tablespoons of the batter into the bottom of each muffin well and created a little indent in the center for the Nutella to sit in. Then I placed about 1-1/2 – 2 teaspoons of Nutella into the indent. Finally, I scooped some more batter on top and assured that the Nutella was surrounded by the batter.
For appearance purposes (but mostly because I can’t get enough chocolate), I sprinkled a few more chocolate chips on top of each muffin before placing them into the oven.
Once allowed to cool for at least 10 minutes, these deadly gems are ready to scarf down. I say “scarf down” because that’s exactly what’s going to go down once you hit that heavenly rich center of Nutella in the center.
This is another fun recipe I had the opportunity of making on one of our local tv talk shows here in Portland, OR–Afternoon Live! Check out how easy they are to make!
I can’t think of a better way to start the morning than with one of these. After all, these are muffins aren’t they?
Do you need a specific pan for this Costco copycat chocolate muffins recipe?
Part of the beauty of Costco muffins is their size. Those huge muffins are recognizable anywhere, and they certainly come in handy when you need to feed a crowd. They're ideal for sharing with a friend or to enjoy all morning (or afternoon) long.
But because the original Costco muffin is about two times larger than a regular-sized muffin pan produces, this recipe calls for a jumbo muffin pan, or Texas-sized muffin pan, to achieve a muffin that's similar in size.
If you don't have a jumbo muffin pan, you can still certainly make this recipe. You can utilize a regular-sized muffin pan for this recipe instead. Make the batter the same way and scoop it into a prepared muffin or cupcake pan with 12 wells. You'll end up with 12 smaller-sized muffins that will taste just as delicious.
Never-Come-Empty-Handed Chocolate Chunk Muffins
I&rsquom that kind of girl that always brings food to parties and just loves to surprise friends, family or co-workers with homemade, vegan treats. But sometimes I don&rsquot have a lot of time and need recipes that go really, really quick and are easy to make. Muffins are in those cases one of best choices, because they bake much faster than cakes. And Chocolate Chunk Muffins are a classic &ndash everyone loves these.
They are really easy and quick to make. While the oven preheats, simply whisk the dry and wet ingredients in one bowl (one-bowl-recipe!), pour them in the muffin tins (an ice cream scooper makes this super easy) and then bake them in the oven for about 15-20 minutes. Easy as that.
If you want fruitier versions, you can sub the chocolate chunks with fruits like blueberries or raspberries, so this muffin recipe is very versatile. It&rsquos the perfect base recipe for all your muffin adventures! :)
Moist, surprising flavor. I made them in the shape of christmas trees and sprinkled them with powdered sugar. My guests loved them as well as my boys!
These were okay for me, but hubs refused to take more than one bite. I chose this recipe thinking it was a good way to hide veggies from the hubs. Trust me, this recipe hides nothing. You can see the zucchini, and smell the zucchini. It didn't fool anyone (you should have seen the "look" I got) even after trying to cover the evidence with chocolate frosting. Now if you're a zucchini muffin/chocolate lover, this is your recipe to try.
I didn't tell my children there was zucchini in them. After having a muffin they told me that it was "The Best" muffin I had ever made for them. And "when was I making them again?" It is now in my rotation. I did reduce the sugar and oil by half and added a cup of regular applesauce (sweetened) and 1/4 cup of chocolate chips. May try to add a banana next time just to play with different flavors.
My family loves these! I do 1 of the cups of flour as wheat & the oil is melted coconut oil since we don't use vegetable. So good! I bake 1 tray of 12 muffins & freeze the other tray of 12 (unbaked). Whenever we want muffins, we just put them in the oven still frozen-takes about the same amount of time to bake :)
Yummy chocolate muffins, kids didn't even notice zucchini :). Increased cocoa to 1/2c, baking powder to 1tsp and added 1c choco chips. Less spice next time for kiddos.
This is my 1st time using zucchini, and while I spent the whole time asking myself if I was doing it right..(was it ripe yet, how big should the grate be, do I press out the juice or keep it. oh there's seeds inside) once that joy was over I got to the fun part. I made two subs cuz I couldn't wait to go to the store. I used 1/2cp olive oil, 1/2 cp applesauce. I don't own cardamom/cloves, so I upped the cinnamon/nutmeg and added a bit of ginger. I knew these would be eaten around breakfast time so I opted to cut sugar down a bit: 3/4cp white sugar & 1/2cp brown sugar. I threw in some mini choc. chips & sprinkled a few on top. I used dutch process cocoa. The added mini chips (very little bit) added to the flavor. These were flavorful, very moist and chocolatey. Can't wait to make them again. Shared with neighbor across hall who gave me the zucchini. She came over an hour later with Paula Dean's zucchini bread! I'm in carb heaven :)
The muffins were okay, but nothing special. The chocolate taste was barely noticeable, in fact. A bit on the dry side as well, though that was partially my fault for reducing the amount of oil (1 cup just seemed like a LOT!). If I make this recipe again, I'll double the cocoa, and sub applesauce for part of the oil to keep them moist.

Types of Vanilla
Vanilla comes from a pod commonly known as a &ldquovanilla bean&rdquo, which comes from the vanilla orchids.
Vanilla pod has been used for flavoring since the Aztecs, and was introduced to Europe by a Spanish conquistador, along with cocoa.
Vanilla extract is created by soaking vanilla beans in alcohol for some time. This is the most commonly used type of vanilla.
Vanilla sugar is common in Europe and some parts of the Middle East, like Israel.
It is made from vanilla beans sitting in sugar, vanilla bean powder mixed with sugar, or sugar mixed with vanilla extract.
In some countries, like Italy, you can also find vanilla powdered sugar which is used for confections.
Vanilla paste is generally a specialty item. It is a thick paste that contains a blend of the scraped-out vanilla pod seeds and vanilla extract.
You can use it as you do vanilla extract and it will leave flakes of vanilla bean like you see in vanilla bean ice cream.
Imitation Vanilla, otherwise known as artificial vanilla, is made from synthetic vanilla.
This is the compound that naturally occurs in vanilla beans and gives it its flavor.
Can I use imitation vanilla?
Many will tell you that you should use high quality vanilla, just like they say you should use the best cocoa.
However, most of us will probably not be willing to pay the hefty price that comes with exceptionally high-quality ingredients.
Overall, vanilla is very expensive, so the extract is as well.
So, if you&rsquore not going to get regular quality vanilla extract, you might as well use imitation vanilla.

LET’S GET STARTED
Start with the yummy chocolate chips. In a bowl measure 1 1/2 cups (or more if you really love them!) and 2 Tbsp of flour and mix it well coating all the chocolate chips. This easy step will stop the chips from clumping down to the bottom of the muffin and make sure there’s plenty of chips throughout the whole muffin! Set the bowl aside for now and onto the easy peasy batter step.
In a mixing bowl empty the whole box of cake mix, 3 eggs, 2/3 cup of milk, 1/3 cup of oil and mix it thoroughly. You can use a hand mixer or even a spatula or tablespoon it blends easily and smoothly. When your batter is smooth and ready, blend in the chocolate chips you set aside and we are ready to bake.
Scoop the batter into cupcake liners or use non stick spray in cupcake baking pans or muffin pans if you are looking for those big juicy muffins! My batch filled 12 cupcake sized liners and I’m sure I could have gotten at least 6 more but I decided to use some oversized baking liners that I picked up at Home Goods and threw on some crushed oreos and M&M’s but that’s a whole other blog! See photo below there were more but they were gone by the time I went for my phone.
