  1. Preheat the oven to 180 C / Gas 4. Butter a muffin tin.
  2. In another bowl, whisk together the eggs, caster sugar, melted butter and milk; then stir in the flour mixture. Stir in the cocoa and the chocolate chips. Fill the muffin moulds to about 2/3 with the mixture.
  3. Bake in the preheated oven until a knife point inserted near the centre comes out clean, about 20 minutes.
  4. Sift together the flour, baking powder and salt in a bowl.

Wattleseed Muffins with White Chocolate Chips

Are you ready for another ‘true-Aussie’ recipe? Last year, I posted a recipe for Quandong Pie, featuring the ‘Australian native peach.’ Interestingly enough, this recipe has become one of my most popular posts.

Today’s recipe is Wattleseed Muffins with White Chocolate Chips. Wattle seeds are another Australian native food- also known as bush tucker. They come from Acacia trees that produce edible pods that can be roasted and ground into a fine or coarse powder. They produce a delicious nutty, chocolatey taste with a hint of coffee- a great addition to breads, granola and stews. They are also very nutritious, containing twice the protein of wheat flour. Did you know that Qantas airlines even featured ‘Wattleseed Ice Cream‘ on their flight menu?

Acacias have a special significance for Australians, as the blossom of the golden wattle has been adopted as the nation’s floral emblem. However, you have to be careful when eating the seeds of acacia trees- there are at least 700 varieties of acacias and many are poisonous! Luckily, I was able to buy my ground wattle seeds at a specialty store in Adelaide.

It’s interesting to note that even Prince Harry and his wife, Meghan Markle were recently given an opportunity to smell and taste various native Australian foods when they visited a Melbourne restaurant. Evidently, she refused to taste native ‘finger limes’, but enjoyed the aroma of saltbush and admitted she has even cooked with wattle seed herself!

My recipe for Wattleseed Muffins with White Chocolate Chips is relatively easy and only takes about 15 minutes or less to bake. I had some Hazelnut Crumb left over from my Chocolate Mousse Cake, so I sprinkled some of that on top of my healthy but delicious muffins! Death By Chocolate Muffins

They’re jam-packed, overflowing, and absolutely EXPLODING with chocolate.

Thus the reason why I called them Death By Chocolate Muffins rather than just Chocolate Muffins. You see, these muffins don’t just have three times the chocolate. Not even four…they have FIVE times the chocolate.

Well allow me to go into detail…

Starting with the batter itself, not only is cocoa powder added, but hot chocolate powder is added as well. The hot chocolate powder might sound like an odd or redundant ingredient to incorporate into the batter, but I just figured it couldn’t hurt. If anything, it would just add more sweetness and intensify the cocoa flavor.

Another ingredient worth mentioning is the instant espresso powder. I use this ingredient almost all the time when it comes to chocolate desserts. It just adds a deeper richness to chocolate, making the overall flavor even more intense. A little goes a long way too! Only a teaspoon is added to the batter. Just enough to enhance the chocolate, yet not too much to actually notice any real coffee flavor.

Once the batter is all combined, the chocolate chips get folded in. I went with two different kinds–semi-sweet and milk chocolate. Although if you want to get technical, I used three different kinds of chips since I used both mini and regular-sized semi-sweet chocolate chips. I just like having a variety of different-sized chips in muffins. The mini chips spread throughout the batter more evenly, but the regular chips give you larger pockets of melty chocolatey goodness.

While there might be enough chocolate in the muffin batter itself, I of course couldn’t help myself. I mean, if you’re going to call these “Death By Chocolate Muffins” they have to be at least a little over-the-top, don’t ya think?

Enter, Nutella.

Because why NOT stuff a dollop of Nutella into the center of an already chocolate-engorged muffin?

Sounds like the best idea ever, doesn’t it?

To stuff the muffins, all I did was scoop about 2 Tablespoons of the batter into the bottom of each muffin well and created a little indent in the center for the Nutella to sit in. Then I placed about 1-1/2 – 2 teaspoons of Nutella into the indent. Finally, I scooped some more batter on top and assured that the Nutella was surrounded by the batter.

For appearance purposes (but mostly because I can’t get enough chocolate), I sprinkled a few more chocolate chips on top of each muffin before placing them into the oven.

Once allowed to cool for at least 10 minutes, these deadly gems are ready to scarf down. I say “scarf down” because that’s exactly what’s going to go down once you hit that heavenly rich center of Nutella in the center.

Shared with neighbor across hall who gave me the zucchini. She came over an hour later with Paula Dean's zucchini bread! I'm in carb heaven :)

You can use a hand mixer or even a spatula or tablespoon it blends easily and smoothly. When your batter is smooth and ready, blend in the chocolate chips you set aside and we are ready to bake.

Scoop the batter into cupcake liners or use non stick spray in cupcake baking pans or muffin pans if you are looking for those big juicy muffins! My batch filled 12 cupcake sized liners and I’m sure I could have gotten at least 6 more but I decided to use some oversized baking liners that I picked up at Home Goods and threw on some crushed oreos and M&M’s but that’s a whole other blog! See photo below there were more but they were gone by the time I went for my phone.
