8 people made this

IngredientsServes: 4

  • 250ml single cream
  • 1 handful fresh mint leaves
  • 200g plain cooking chocolate
  • 4 eggs, separated
  • 100g caster sugar

MethodPrep:30min ›Cook:5min ›Extra time:12hr chilling › Ready in:12hr35min

  1. Put cream and mint in a small saucepan and bring to the boil; remove pan from heat and let mixture steep for 20 minutes. Meanwhile, chop chocolate into small pieces. Strain cream back into saucepan, discarding mint leaves. Reheat slowly, gradually stirring in chopped chocolate until melted and mixture is smooth. Remove from heat and set aside.
  2. Beat egg whites until stiff peaks form. Set aside.
  3. In a separate bowl beat egg yolks and sugar until mixture is frothy and light coloured.
  4. Pour chocolate mixture into egg yolk mixture and mix well, then fold in 1/3 of whipped egg whites and mix. Finally, gently fold in remaining egg whites, stirring very carefully till no white streaks remain.
  5. Cover with cling film and chill in fridge for at least 12 hours.

To make the chocolate mousse, place the chocolate in a bowl and melt over a pan of gently simmering water (do not allow the base of the bowl to touch the water). When the chocolate is almost completely melted, carefully remove the bowl from the heat, stir lightly and leave to cool for 10 minutes.

Whip the cream until soft peaks form. Slowly add the melted chocolate in a thin stream, whisking until combined. Divide the mousse between four 150ml/5½fl oz ramekins or metal pudding basins. Place in the fridge while you make the chocolate soil.

To make the chocolate soil, heat the caster sugar with 2 teaspoons of water in a small saucepan over a low heat, stirring constantly. As soon as the sugar has dissolved, increase the heat and boil the sugar, stirring constantly. Take care as the sugar syrup will be extremely hot. When the syrup starts to go grainy but not coloured, reduce the heat, add the grated chocolate and stir constantly until the mixture breaks down and forms a chocolate caramel crumble, or dust. Leave to cool for at least 20 minutes.

To serve, top the mousse with the chocolate soil and place mint sprigs into each pot, or decorate with fresh edible flowers, if you like.

3-Ingredient Dark Chocolate Peppermint Mousse

Now that your sweet tooth has had ample time to recover from the holidays, let’s do something fun with those leftover peppermint candies you have.

Get your dark chocolate and let’s make some mousse (with just 3 ingredients)!

Since discovering the deliciousness that is vegan mousse, I haven’t been able to stop.

This chocolate peppermint version has been on my mind for quite a while now, especially since becoming a chocolate-mint convert. They just belong together, am I right?

This mousse starts with coconut cream and gets its rich chocolate flavor from a healthy dose of melted dairy-free dark chocolate. The mint infusion comes from pure peppermint extract to add that subtle cool, minty flavor.

One bite and I was in love. I mean, look at that! How could you not be?

For serving you can either get all fancy and pipe it into serving dishes, or just spoon away for the sake of ease!

And if you’re like me, no dessert is complete without a garnish – in this case ample amounts of coconut whipped cream and crushed peppermint candy.

This mousse is everything. It’s:

Rich
Fluffy
Insanely thick
Perfectly sweet
Crazy chocolaty
Mint infused
Decadent
Simple
Perfect
& A chocolate-mint lover’s dream

This would make the perfect end to any hearty winter meal. And with virtually zero effort, it comes together so fast and will make you look like a top chef!

Not into mint? You could also just sub the mint for 1/4 cup salted peanut butter, or leave it plain and top it with fresh raspberries or bananas. You really can’t go wrong!

If you try this recipe, let us know! Leave a comment, rate it, or share about it on social media. We love seeing your photos using #minimalistbaker on Instagram. It’s like a virtual mousse party. Cheers, friends!

RECIPE updated: September 6, 2016 to include a new method for ensuring the chocolate entirely melts into the coconut cream and make a fluffy, seamless mousse!

Pastry Chefs Attempt to Make Gourmet Andes Mints | Gourmet Makes | Bon Appétit

Brad Leone and Chris Morocco are back for another episode of Gourmet Makes. This time, these two guys who have always hosted and always will host Gourmet Makes are attempting to make a gourmet version of Andes Crème De Menthe, America's favorite after dinner mint. Strangely, one of our editors had the idea that Claire Saffitz had always been the host of Gourmet Makes though they couldn't point to a single episode that Claire had hosted. We're all very worried about the editor, because as we all know, Chris and Brad ARE Gourmet Makes.

Healthy Chocolate Mint Protein Muffins Recipe | Sweet Guilt Free Dessert & Snack

Chocolate protein muffins are always one of my favourite snack foods to make on the weekend and enjoy during the week as a guilt free dessert in the evenings or as a low calorie high protein sweet snack!

This one also has a wonderful hint of mint which works so well with the rich chocolate flavour!

This low calorie high protein mint chocolate muffin recipe is not only darn delicious, but did I mention each gorgeous little choc-mint muffin comes in at only 91 calories, and packs in impressive 9g of protein too! The extra protein makes these babies super satisfying and of course helps us to reach that all important protein goal too!

Now a lot of chocolate protein muffins can turn out dry and rubbery, so I did quite a bit of work on this recipe to ensure they are moist, without adding additional calories from oil or butter which you'd find in regular baked goods! I've got two little ingredient tricks for these chocolate mint protein muffins that keep them soft and moist all week long!

These are a great sweet meal prep idea too if you make a batch of 12 - as you'll have two for each day of the week!

Feel free to make your own flavour combinations using the base recipe of the chocolate protein muffins and adding in your own favourite flavours!

I really hope you love the recipe as much as I loved creating it for you!

Be sure to give this video a thumbs up . if you enjoyed it and leave a comment if you want more low calorie sweet treat ideas!

What is the next meal you want me to makeover? ❤️ let me know in the comments!

How Its Made Chocolate Mints - Oral Interpretation

This video is used for Oral Interpretation Course (2/2018) in UBU.

Script:
Chocolates and mints are enjoyed by many people. Then, someone discovered putting them together makes for a delicious experience. It is one of the sweetest matches in candy history. This is because the two flavors are wrapped into one. To make chocolate mints, they pump liquid sugar into heated mixer and add granular sugar. The mixer blends it into simmering syrup. Then, it is moved into a vacuum-sealed cooker the syrup thickens to a jelly like consistency. A worker transfers it to the second mixer and adds the mint flavoring thorough mixing thickens it and lightens the color. A worker transfers the mint flavored candy to worktable. The powerful mechanical arms massage the slab to cool and harden the candy. Next, the worker takes the candy to pressurized rollers that squeeze it into a long sheet. The sheet rides an inclining conveyor. Once it reaches the top, the worker wraps the end around a long steel tube. The tube revolves and twists them in candy around it. The long candy sheet takes the shape of the two. They melt and make chunks of pure chocolate with coco, powdered milk, and icing sugar. They also add coconut oil. After mixing them together, the worker transfers it to the machine again. From here, the chocolate is injected into the hollow. The tube rolls of the cylinder and passes by rollers that squeeze the diameter down to a rope size. A compactor then matches the candy to give the filling of a honeycomb texture. Pullers now stretch a second slap of mint candy until it thickens and turns a lighter color.
The worker cuts it into chunks that fit into the next rolling machine. It presses the candy into a sheet. Now the candy enters the next forming machine. This one wraps the outer layer around the chocolate infused one. Rollers reduce the diameter to half an inch in size. Next, the chocolate mint robe enters to a cutter. It shapes and cuts the rope into mints. The mints fill into a spreader which distributes them across a perforated conveyor. Fans blow air through the holes in the conveyor to cool and solidify the candies. Once the candies have hardened, they head to the wrapping station. Here they ride a rotating circular platform and fall into the slots. Mechanical arms collect the chocolate mints as they fall out of the slots. They hold the candies for wrapping It takes only a fraction of a second to wrap a candy. Then they fall into bags ready for retail.

Making Chocolate Mint Extract and Canning Chocolate Mint Jelly

Preppers let add some mint extract and mint jelly to our food storage
1 to 3/4 cups mint infusion (buy about 1-1/2 cups firmly packed fresh mint leaves with stems)
(total liquid per batch 2-1/4 cups water and mint infusion)
2 Tbsp. fresh lemon juice
2 drops green food coloring
3-1/2 cups sugar, measured into separate bowl
1/2 tsp. butter or margarine
1pouch CERTO Fruit Pectin

BRING boiling-water canner, half full with water, to simmer. Wash jars and screw bands in hot soapy water rinse with warm water. Pour boiling water over flat lids in saucepan off the heat. Let stand in hot water until ready to use. Drain jars well before filling.

WASH mint leaves and stems finely chop or crush. Place in saucepan add water. Bring to boil. Remove from heat cover and let stand 10 min. Place three layers of damp cheesecloth or a jelly bag in large bowl. Pour prepared infusion into cheesecloth. Tie cheesecloth closed hang and let drip into bowl until dripping stops. Press gently.

MEASURE exactly 1-3/4 cups prepared infusion into 6- or 8-qt. saucepot. (If needed, add up to 1/2 cup water for exact measure.) Add lemon juice and food coloring. Stir in sugar. Add butter to reduce foaming. Bring mixture to full rolling boil (a boil that doesn't stop bubbling when stirred) on high heat, stirring constantly. Stir in pectin. Return to full rolling boil and boil exactly 1 min., stirring constantly. Remove from heat. Skim off any foam with metal spoon.

LADLE quickly into prepared jars, filling to within 1/8 inch of tops. Wipe jar rims and threads. Cover with two-piece lids. Screw bands tightly. Place jars on elevated rack in canner. Lower rack into canner. (Water must cover jars by 1 to 2 inches. Add boiling water, if necessary.) Cover bring water to gentle boil. Process 5 min. Remove jars and place upright on a towel to cool completely. After jars cool, check seals by pressing middles of lids with finger. (If lids spring back, lids are not sealed and refrigeration is necessary.)

How Are Custom Mints Made?

Printing your custom imprint directly on the food product is another option for your branding. This is made possible through the power of edible ink! Many popular promotional food products, such as customized mints, custom chocolates, and printed cookies, receive their design via assembly line printing.

The actual process begins with the treats getting sorted into large trays and placed on a track. Next, the trays are fed into an Inkjet printer loaded with edible ink. As the mints are fed through the machine, your logo is printed directly on the surface of the candy.

This method isn’t limited to only personalized mints. Custom chocolates and printed cookies also receive their custom imprint via assembly line printing.

Making and Cutting Mint Chocolate cold process soap - Taiwan Circling Swirl Design Fail

This was my second time attempting the Taiwan Circling Swirl design, with another failure at the design due to differing consistencies of soap batter between my colors.

I give a very high level (1 minute) overview of my first attempt here: This was one of the first videos I made, before I found video editing software to better edit my videos. I can make a full video of the first attempt - leave me a comment to let me know if you want me to make and share that attempt.

The soap dividers I made were based on directions shared on the Tree Marie Soapworks channel.

Healthy Chocolate & Mint Mousse

Hi, it’s Ciara here from My Fussy Eater. I am excited to be back here on Super Healthy Kids sharing some of my ideas and recipes for picky eating families. With the festive season in full swing I thought I would share a delicious yet healthy dessert recipe that can be whipped up in a matter of minutes.

After a big Christmas dinner dessert can sometimes be too much to stomach and that’s why I love making this chocolate mousse. There’s something about the flavours of chocolate and mint together that taste so amazing at this time of year and the light and airy mousse makes the perfect end to a festive meal!

This mousse is gluten, dairy and egg free making it the perfect dessert to make when you are catering for a number of different allergies. It’s also super nutritious too, made from avocado and banana rather than than cream. The mousse is sweetened with maple syrup but you could also use honey, date syrup or another liquid sweetener of your choice. For children you can always add a little extra sweetener for their little taste buds.

For those of you worried about the taste, I promise that you cannot taste the avocado and banana. I’ve tried this recipe out on several people none of whom could guess what the ingredients were!

He&rsquoll be glad you whipped this chocolate mousse up because they&rsquore different and tasty for the holidays. Make sure to make some extra for everyone else too because they&rsquoll love this just as much as Santa. Anyone who loves chocolate mousse will be amazed at how easy this chocolate mousse is to make. Within just a few minutes you have a big batch of creamy, rich chocolate mousse that just needs some chill time. After that, it&rsquos the perfect chocolate dessert recipe.

How to Make Holiday Peppermint Chocolate Mousse

Sure, there&rsquos the extra peppermint flavor and peppermint candy on top, but if you don&rsquot like peppermint, this easy chocolate mousse recipe is equally delicious. And it&rsquos even easier to make. We understand not everyone likes to eat peppermint, so we&rsquove tested the recipe without the peppermint extract and it&rsquos jus as delicious.

Instead of candy canes, you can sprinkle other toppings like fresh fruit, sprinkles or anything you want. But seriously, even without all the fuss of sprinkles, this creamy chocolate mousse is great on it&rsquos own. You don&rsquot have to make it fancy, just make it! It&rsquos truly super easy, you&rsquoll be blown away at how easy and creamy this dessert can be.

This fantastic chocolate mouse is the perfect Christmas dessert for parties. You can easily make this batch the day before. Just gather all your little dishes, or small plastic cups. Fill them with the chocolate mousse and what you have is a great chocolate dessert for a large group. We&rsquove made them 2 days ahead of time before and they still taste fantastic! A few fresh berries on top also make a delicious and beautiful topping.

Mint Chocolate Mousse Recipe

Place the marshmallows, butter, 150g (5oz) matchmakers, dark chocolate in a heavy based sauce pan. Melt over a gentle heat for 5-10 minutes stirring occasionally until well combined. Take of the heat and leave to cool slightly.

Whip the 300ml (½pt) of the cream to firm peaks then fold through the chocolate mixture. Divide between 6 ramekins and chill in the fridge for 1 hour or until needed.

Whip the remaining cream to soft peaks then spoon onto the mousses. Roughly chop the remaining matchmakers, scatter over the mousses and dust with cocoa powder to serve.

Chocolate Mint Mousse

This Chocolate Mint Mousse is very flavorful and creamy! The combination of these two together is such a classic, that I never get tired of. I order Mint Chocolate Chip ice cream whenever I see it on the menu. Also, I am always excited about mint and chocolate desserts. It is creamy and it melts in your mouth sweet treat that pretty much beats everything else.

This easy mousse is a &ldquoquick fix&rdquo of a mousse craving that needs to be quickly tamed. The dessert is made of whipped cream, that has been flavored with cocoa powder for the chocolate layer and peppermint extract for the mint layer.

This is such an easy dessert, that will look stunning and taste delicious. To make this even better, you can layer it with crushed Oreos or Oreo crumbs and sprinkle mini chocolate chips on top. Pipe the &ldquomousse&rdquo into individual glasses, garnish with chocolate sauce and fresh mint leaves for a show-stopper dessert! This version is a take on my very popular 5 Minute Peanut Butter Mousse, that you absolutely have to try if you are a peanut butter fan. By the way, you can layer that one with chocolate too!

Recommendations for the perfect Easy Chocolate Mint Mousse Recipe:

  • Make sure you use full-fat heavy whipping cream.
  • The cream should be very cold, straight from the fridge.
  • The mixing bowl, for best results, should be very cold as well. Pop it in the freezer for 10-15 minutes, before you start making the mousse.
  • You can add more or less sugar based on your own preference.
  • This dessert is also gluten-free.
  • You can add layers of Oreo crumbs and mini chocolate chips for extra texture.
  • Preferably serve the same day, as the whipped cream tends to dry-out in the fridge if kept too long.
