This is lovely, it is also cheap and easy to make. It can be served with salad for a light lunch or with potatoes and veg for a filling main course.

- 1 shop-bought flan case
- 1 Mattesson's smoked sausage, diced (for a 'small' flan case, just use half)
- 2 eggs
- 150ml single cream
- salt and pepper to taste

- Preheat the oven to 220 C / Gas 6. Place the diced smoked sausage in the flan case.
- In a large bowl mix the eggs with the single cream and whisk until creamed together. Season with salt and pepper.
- Pour egg and cream mixture over the smoked sausage. Bake in the oven for 40 minutes until golden brown.
