A very easy summer dessert with only 3 ingredients. You can easily make this for more persons - count about 2 to 3 apricots and 20 g chopped almonds and sugar per person.

  1. Preheat your oven to 180 C / Gas 4. Place almonds on a baking tray and bake till fragrant, while the oven preheats.
  2. Wash apricots, cut them in half, and remove the stones. Cut apricots into wedges and place in an overlapping pattern in individual gratin dishes or a baking dish.
  3. Finely chop the almonds and mix with the sugar. Scatter over the apricots and bake till the apricots are bubbly, 20 to 25 minutes.
  4. Serve lukewarm or at room temperature with whipped cream or vanilla ice cream.

Apricots are such a delightful fruit, beautiful at this time of year, the perfect end to a barbecue. But they are also often disappointingly woolly or too firm and sour. Redeem them, if you've been unlucky, by baking in a hot oven. The heat restores their creamy, floral and fruity characteristics, accentuated here by the addition of the rosemary, orange and vanilla. Served warm or cold with the yoghurt cream, they're delicious for dessert, but light enough for breakfast, too.


Apricots, Cinnamon & Vanilla

I mean just talking and writing about this, it’s making me want to repeat this recipe today. The first bake dissapeared within half an hour of it being baked. I barely managed to take pictures before my family started digging in.

Cinnamon, brown sugar, vanilla and butter will make any dessert delicious & decadent. Add that on top of apricots and you have a winning dessert. It’s delicate, not too sweet with a slight underlying bitter taste from the apricots. Cover it with your favorite ice cream and the warm apricots and their syrup, mixed with the melting ice cream will just make you want to slow down time. Really!!


Recipe Summary

  • 4 ½ cups dried apricots
  • 4 ½ cups boiling water
  • 1 teaspoon vanilla extract
  • 1 (1.75 ounce) package powdered fruit pectin
  • 7 cups white sugar
  • ¼ cup lemon juice

Soak apricots in boiling water in a bowl until hydrated, about 30 minutes. Blend apricots, remaining water, and vanilla extract in a food processor, working in batches, until blended but still slightly chunky.

Combine apricot mixture with pectin in a large pot over medium heat cook until just boiling. Add sugar and lemon juice boil until sugar has dissolved, 1 to 2 minutes.

Sterilize jars and lids in boiling water for at least 5 minutes. Pack the apricot jam into the hot, sterilized jars, filling the jars to within 1/4-inch of the top. Run a knife or a thin spatula around the insides of the jars after they have been filled to remove any air bubbles. Wipe the rims of the jars with a moist paper towel to remove any food residue. Top with lids, and screw on rings.

Place a rack in the bottom of a large stockpot and fill halfway with water. Bring to a boil, then carefully lower the jars into the pot using a holder. Leave a 2-inch space between the jars. Pour in more boiling water if necessary until the water level is at least 1 inch above the tops of the jars. Bring the water to a full boil, cover the pot, and process for 10 minutes.

Remove jars from the stockpot and place onto a cloth-covered or wood surface, several inches apart, until cool, about 1 hour. Once cool, press the top of each lid with a finger, ensuring that the seal is tight (lid does not move up or down at all). Store in a cool, dark area.


Slow-Baked Pork and Apricots

Preheat oven to 150°C. To prepare the pork, mix cumin, paprika, salt and pepper and sprinkle evenly over the pork to lightly coat.Heat 1 tbsp of the oil in a large, heavy-based pan and brown pork over a high heat, working in batches so as not to overcrowd the pan. Add more oil as needed between batches. Transfer pork to a large ovenproof dish as it browns.

Add onion and ginger to pan and stir over a medium heat until lightly browned (about 5 minutes). Add stock and orange zest and juice and bring to a boil, stirring to lift any pan brownings.Scatter apricots around the pork and pour the hot sauce over the top. Cover and bake for 2 ½ hours. Slow-Baked Pork and Apricots can be prepared ahead until this stage, stored in the fridge for up to 48 hours or frozen and reheated when needed. Bring back to room temperature and then reheat in a 180°C oven until fully heated through (20-30 minutes).

When ready to serve, mix olives and parsley into the hot pork. Serve with wilted spinach.


Vanilla baked cream with poached apricots

Put the sugar in a pan, split the vanilla pods lengthways and scrape out the seeds with the tip of a knife, mixing them into the sugar with your fingertips. Pour in the milk and bring almost to the boil. Take off the heat and set aside for 30 minutes to cool.

Preheat the oven to 150°C/gas mark 3. Beat together 3 whole eggs and 3 yolks in a bowl (save the 3 egg whites for another recipe), then strain in the milk and stir in the cream. Strain the mixture through a sieve into a jug, then pour into a non-stick 23cm ring-shaped cake tin or metal jelly mould. Put the mould into a small roasting tin and pour hot, not boiling, water into the roasting tin until it comes halfway up the outside of the mould. Bake for 40-45 minutes until set but still slightly wobbly.

Remove the tin from the oven and lift the mould out of the hot water. Leave to cool at room temperature then chill for at least 2 hours.

Halve the apricots and remove the stones. Slice open the vanilla pods lengthways, scrape out the seeds with a knife and mix into the sugar with your fingertips. Put the vanilla sugar, 500ml water and the vanilla pods into a pan and leave over a low heat until the sugar has dissolved, stirring occasionally. Bring to a simmer and add the apricots. Bring back to a simmer until the apricots are just tender when pierced with a cocktail stick. This will depend on the ripeness of your fruit, so keep an eye on them. Lift the apricots out of the syrup with a slotted spoon. Return the syrup to the heat and boil rapidly until reduced by half. Add the lemon juice, leave to cool, then strain over the fruit. Chill the apricots or serve at room temperature.

To turn out the baked cream ring, press lightly with your fingertips around the outer and inner edge to break the seal from the tin. Dip for 15 seconds into a bowl of hot, not boiling, water. Give it a gentle shake then invert on to a plate. Serve with the apricots.
