We clean the fish of scales, then we clean them of the intestines, after which we wash them well with cold water. Season the fish well on the inside, but also on the outside with salt and pepper, then place the lemon slices and garlic cloves in the belly of the fish.
We wash the zucchini, then we cut it into slices, we peel the onion and we cut it into slices.
Place the chopped vegetables in a large tray (preferably heat-resistant), over them, place the cherry tomatoes and sprinkle everything with olive oil and season again with salt and pepper. Place the fish in the pan, over the vegetables and put everything in the oven heated to 200 degrees C, for approx. 20 minutes or until the fish is nicely browned on top.
We take them out on a plate and they can be served!
