What to eat on Canada Day

1 July, Canada Day (sometimes known as Canada’s birthday) is a time for friends and family casually getting together, with lots of food. Picnics and barbecues are popular ways to celebrate.

Special citizenship ceremonies, air shows, and fireworks are also a part of our national day of celebration. Canada Day is a day to take advantage of and enjoy the great Canadian outdoors. The day signals the real start of summer – school is out, the days are longer, and the weather is conducive to eating most meals outside.

If you’re going to celebrate Canada Day, do so with food. It’s hard to define a specific menu because the country is made up of so many different cultures and cuisines – really, anything goes! However, grilling is always a popular option when you’re entertaining outside. At most Canadian barbecues you will find chicken wings (try replacing the honey in this chicken wings recipe with maple syrup for a Canadian touch!). Sides of salmon and fish kebabs are also great choices because they can be prepared in advance and don’t take very long to cook.

No BBQ would be complete without burgers, and Jamie’s ultimate Canada Day burger is a sure-to-please option. Alternatively, this grilled steak salad is a great way to combine mains and sides all on one plate. But don’t reserve the grill for meats and burgers alone: take your pizzas to the next level by grilling them too (and making them super-Canadian with beer-caramelized onions!).

Sandwiches, wraps and tacos are a great way to offer guests dishes they can customize. Jamie’s rainbow salad wrap is a great example – set out bowls of the various grated vegetables and get people to choose their own rainbow filling and dress their wraps themselves. Tacos can be assembled in the same way, and the ingredients are easy to prepare in advance. Classic chicken sandwiches and coleslaw are also surefire winners for a hot day – easy to eat outdoors and all the great flavours of summer!

For an outdoor meal, I like to offer a variety of different salads, which are especially essential for making a good barbecue great. A classic chopped green salad serves brilliantly every time, but for something really special, how about a tomato carpaccio with raspberries and burrata to take advantage of the local in-season tomatoes?

Potato salad is always a crowd-pleaser too, and with so many varieties (and colours!) of new potatoes available, you have the opportunity to bring a little more colour to the table, too. If you want to bring a guaranteed smile to your guests’ faces, though, try this candied bacon green salad (and use maple syrup to candy the bacon for a true Canadian touch!).

When it comes to desserts, there’s nothing like a cool trifle or pavlova on a warm summer’s day. Use red berries exclusively for a “Canada flag” colour scheme (or hey, make an actual maple leaf shape on top with the berries!).

Alternatively, if baking is your thing, how about some gorgeous cinnamon buns featuring that quintessential Canadian ingredient, maple syrup?

In a few years, they formed a new colony called “the Dominion of Canada.” Other colonies were formed and joined, and so it was, in 1982, they became a fully independent nation. This is what is celebrated on Canada Day, July 1st. Flags, fireworks, parades, and speeches are the order of the day. And cookouts. And food with friends.

Our gastronomical celebration of Canada Day begins in the Maritimes, where the Fathers of Confederation first met. Dinner is from the icy waters of the newest Canadian province, Nunavut, where Arctic Char make their home.

Maritime bake: 150 calories 6.5 g fat 1.2 g fiber 16.6 g protein 6 g carbs [5.5 g complex] 84 mg Calcium NB: The food values given above are for the egg bake and fruit only, not the optional beverages . PB GF To us, the Maritimes of Canada are all about seafood, potatoes, local cheese, and lots of the herb Savory, winter or summer. 1 two-oz egg 1/2 oz salt cod [cover with water and soak 30 minutes] 1/8 oz Cheddar OR ADL brand “Old/Fort”, grated 1 tsp dried savory 1/2 Tbsp dry potato flakes + 1 Tbsp water pepper to taste 2 oz strawberries optional: blackish coffee [53 calories] or tea or lemon in hot water optional: 5-6 oz berry-yogurt smoothie [88 calories] or green smoothie or unpasturized apple cider

The night before: 1] stir the potato flakes and water together in a small bowl and let sit to moisten. 2] cover the salt cod with water and soak 30 minutes. Drain and flake into small pieces. Next morning: Spritz a ramekin with cooking spray. Set the toaster oven at 350 degrees F. Combine the potato, cod, and savory and put into the ramekin. Whisk the egg and pour over the cod. Top with grated cheese and bake 12-15 minutes. Prepare the beverages as you like them and plate the berries.

Arctic Char with Peas: 263 calories 8 g fat 3 g fiber 28 g protein 10 g carbs [10 g Complex] 25 mg Calcium PB GF Arctic Char is a member of the Salmon Family which can be both sustainably fished in the wild and farm-raised. It is delicious, too. There are two presentations given: one ridiculously easy, the other slightly more complex. Both are great.

Recipe I : 4 oz arctic char fillets ½ cup green ‘English’ peas, fresh or frozen Bake the fish at 400 F. for 10 minutes/ inch of thickness or grill for 4 minutes/side. Cook the peas and serve over/around the fish.

Recipe II : 247 calories 8.7 g fat 2 g fiber 26.7 g protein 7.3 g carbs [5.5 g Complex] 74.7 mg Calcium PB GF 4 oz arctic char fillets ¼ cup watercress sauce [see SIDEKICKS II oct 4, 2017] 1 cup snow peas, stems and strings removed Bake the fish at 400 F. for 10 minutes/ inch of thickness or grill for 4 minutes/side. Warm the watercress sauce and serve over the fish. Cook the peas and plate.

What to Eat for Canada Day

Today is Canada Day! We in the U.S. like to celebrate everyone else’s holidays, so we may as well join in the fun. We already know what to drink, so let’s take a look at Canadian cuisine. Some of these dishes stand out for their Canadian origins, whether it’s a native crop or a home-grown company. Others are just favorites, and are perceived as a little different from American cuisine. Canadians are invited to offer corrections, additions, and opinions.

Poutine

Poutine is a proud Canadian’s heart attack in a bowl, consisting of french fries, thick gravy, and cheese curds. We've looked at its invention by Quebec restaurateur Fernand Lachance in 1957, although there are some who claim other origin stories. Authentic poutine has to live up to Canadian tastes and tradition. If you want to try them at home, use a recipe from the dish’s source. Here’s one from French-Canadian chef Chuck Hughes.

Butter Tarts

Butter tarts are a traditional dessert that Canada does not share with other countries. It’s a small flaky tart crust filled with sugar, butter, maple syrup, and eggs, then cooked until the top forms a bit of a crispy crust. The closest American analogy I can imagine is pecan pie without the pecans. But sometimes butter tarts have pecans, or raisins, or chocolate chips, which is a matter of taste, unless you’re a purist. You have a choice of many recipes.

Kraft Dinner

What Americans know as Kraft Macaroni and Cheese is packaged slightly differently in Canada as Kraft Dinner. If you think of the kit with the orange powder as a particularly American comfort food, listen to this: Canada, with a fraction of the population of the U.S., consumes a lot more blue boxes of macaroni and cheese than Americans. In fact, Kraft Dinner is the most-purchased grocery item in Canada.

This makes KD, not poutine, our de facto national dish. We eat 3.2 boxes each in an average year, about 55 percent more than Americans do. We are also the only people to refer to Kraft Dinner as a generic for instant mac and cheese. The Barenaked Ladies sang wistfully about eating the stuff: “If I had a million dollars / we wouldn’t have to eat Kraft Dinner / But we would eat Kraft Dinner / Of course we would, we’d just eat more.” In response, fans threw boxes of KD at the band members as they performed. This was an act of veneration.

Tim Hortons Coffee and Doughnuts

Tim Hortons has restaurants in the U.S., but the company is known most for supplying Canada with coffee and doughnuts. The first Tim Hortons was opened in 1964 by hockey star Tim Horton in Hamilton, Ontario, selling only coffee and doughnuts. As the company grew, it became a big supporter and sponsor of hockey at all levels. The vast majority of ready-made coffee purchased in Canada comes from the over 3,000 Tim Hortons Canadian outlets.

Maple Syrup

This is a no-brainer: Canada produces 80% of the world’s maple syrup. What else would you expect from a country that has a maple leaf on its flag? Besides, it tastes so good with bacon! The Federation of Quebec Maple Syrup Producers even has a strategic maple syrup reserve, in which 40 million pounds of syrup were set aside in 2011. Americans learned of this reserve in 2012, when six million pounds of the syrup was stolen.

Nanaimo Bars

Nanaimo Bars are a dessert candy named after the town of Nanaimo, British Columbia. The recipe appeared in a cookbook under that name in 1953, although similar earlier recipes can be found. The concoction is basically a layer of wafer crumbs covered by vanilla or custard flavored buttercream icing and the whole thing is then coated with chocolate. There are plenty of recipes available online. I can’t imagine that any of them are not delicious.

Bacon

What’s not to like about bacon? It goes so good with maple syrup! In 2010, a survey by Maple Leaf Foods found that 43% of Canadians would choose bacon over sex. At least that’s what they said when people from the bacon company came to ask.

Ketchup Chips

The United States eats a lot of potato chips, and we have a reputation for putting ketchup on everything -except potato chips. That’s a Canadian treat. There are many brands of ketchup chips sold in Canada, but few are available in the U.S. Lay’s makes ketchup chips, but they are only sold in Canada.

Recipe Summary

  • 1 cup all-purpose flour
  • 2 eggs
  • ½ cup milk
  • ½ cup water
  • ¼ teaspoon salt
  • 2 tablespoons butter, melted

In a large mixing bowl, whisk together the flour and the eggs. Gradually add in the milk and water, stirring to combine. Add the salt and butter beat until smooth.

Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each crepe. Tilt the pan with a circular motion so that the batter coats the surface evenly.

Cook the crepe for about 2 minutes, until the bottom is light brown. Loosen with a spatula, turn and cook the other side. Serve hot.
