INGREDIENT:

1 medium eggplant
1 large zucchini
1 large onion
2 cloves garlic
1 little cauliflower
1 green bell pepper
1 yellow bell pepper
1 red bell pepper
100 ml of olive oil
¼ teaspoon of thyme
1/2 teaspoon brown sugar
2 tablespoons tomato paste
1 tablespoon vodka
4 tablespoons water.

Heat the olive oil in a pan over medium heat and heat the onion and garlic.
After it has hardened, we take them out of the oil, we put them separately on a plate and we continue to heat the eggplant and zucchini slices one by one, in the same oil. During this time, boil the cauliflower bunches in salted water (about 6 minutes, so that they are still strong).

But as I read and read, I found some secrets.
-You only start cooking lecso from fresh vegetables, taken to the market, so we are in the 12th hour. Only white peppers, with thick flesh and the incomparable taste we know. Choose only ripe tomatoes in the light and heat of the summer sun.
-Respect the proportion between the three basic components:

Four parts pepper
- Onions and peppers are hardened, almost fried in fat and only after they have softened and become glassy, ​​you can salt. Otherwise, the salt removes water from the vegetables and they have no taste.
Cook over low heat, stirring occasionally, until tomatoes have a pasty consistency.
If you make lecso with rice, as I did, limit yourself to a tablespoon of rice per person, add it when the vegetables are almost cooked, and pour, if necessary, a little water.

For 4 servings:

400 g peppers
200 g well ripened tomatoes
100 g yellow onion
A clove of garlic
50 ml oil
4 tablespoons rice
A teaspoon of paprika
A piece of juicy sausage, like debret
