Because I still had baked pumpkin, I thought of doing something else with it: something fast, sweet, new and attractive. This is how this recipe was born, which turned out to be a very good dessert.

Every spring I look forward to the appearance of early strawberries to make strawberry ice cream with cream and Greek yogurt. Of course, first the whole family eats saturated fresh strawberries, right then brought from the market. We are talking here about Romanian strawberries harvested from the gardens of local producers, not about the imitations without aroma and taste that are harvested green and ripened by trucks.

From what remains I start to do either strawberry mousse (recipe here), either a small portion of creamy strawberry ice cream and flour.

I make strawberry ice cream based on a vanilla ice cream recipe with yolks, sugar and whipped cream. I wrote it down in the & # 821780 years of a Swiss magazine and have done it dozens of times since. It comes out creamy and fine, without ice needles. Ice is formed from water and if the composition does not have such a thing it will not form ice needles. That's why I don't put milk in ice cream, just natural whipped cream made from sweet cream and, sometimes, Greek yogurt which is very creamy.

Dough ingredients:

Ingredients for pudding cream:

  • 7 yolks, 10 tablespoons sugar
  • 1 liter of milk, 2 sachets of vanilla pudding
  • 4 tablespoons wheat flour
  • 250 gr butter

Method of preparation:

Beat the egg whites, then add the sugar. Stir until the sugar dissolves.

At the end, add wheat flour. Mix well. Put the dough in a tray lined with baking paper. Bake the dough for 20 minutes at a temperature of 180 degrees.

Beat the yolks with the sugar until they froth. Add the pudding powder and flour mixed in 200 ml of milk. Mix carefully so as not to form lumps.

The rest of the milk is boiled. When it starts to boil, add the pudding and mix. We cook a thick vanilla cream. We take it off the heat and let it cool. Add the butter in the slightly cooled cream.

Stir to obtain a smooth cream. Spread the cream over the baked and cooled dough.

Using the mixer, beat the whipped cream until it hardens. Spread the cream over the vanilla cream.

Garnish the cake with almond flakes. Put the cake in the fridge for at least 3 hours.

It would be good to leave the cake in the fridge overnight. The next day, we can cut it and serve. Have fun with your loved ones and increase your cooking!

The top is made from a cream of butter, sugar and salt, add the yolks and flour. Mix all with your fingertips. When the dough has become uniform and resembles some larger crumbs, add the milk. Whisk the egg whites and easily incorporate them into the pumpkin composition. Spread the dough in a pan greased with oil and lined with breadcrumbs. The walls of the form are also covered. Place the tray in the preheated oven at 170 degrees for 3-4 minutes. Then put the filling and spread almond flakes on top. Bake again for 10-15 minutes.
