I had seen the picture of this & # 8222pull apart bread & # 8221 or “cheesy bread” on the internet, on a Hungarian site about 3-4 years ago (I didn't have the blog yet). I did it about 2 times but I was not very happy with the result. There was a part down that was practically empty pita (not that it would be bad) but that didn't open nicely like a flower. I thought there had to be a solution to make it work the way I wanted it to. And here is the result!
It is neither too soft nor too hard, the shell is thin. It is important that this bread has consistency because otherwise it softens too much and becomes & # 8222mamaligoasa & # 8221. That's why I chose a bread with about 20% black flour. The bread has a diameter of about 20 cm and about 700 g.
You can also choose a commercial bread but with a firmer texture and crispy crust.
Regarding the filling: choose, dear ones, what you like! It is good to have 1-2 types of cheese / cheese, onions, chives, leeks, garlic, some sausage (a ham, a sausage), a lot of butter and some herbs. How to prepare pasta with mushrooms, ham and sour cream
In a large pot put boiling water for pasta (with 1 teaspoon of salt). Meanwhile, cut the ham into thin slices and then chop the match. Cut the mushrooms into slices and clean and slice the garlic cloves. Heat 1 tablespoon of olive oil in a larger pan and cook the ham together with the garlic (it should not brown).
Over the hardened ham and garlic, add the mushroom slices and season with salt and pepper. I don't use Italian spices like oregano or basil for this type of pasta & I prefer to feel the taste and aroma of mushrooms and ham. The mushrooms will leave water in the pan and should not be covered just for it to evaporate. Meanwhile, the pasta water comes to a boil and they are also boiled in the big pot. The idea is for the pasta and the sauce to be ready at once. Boil the mixture of mushrooms and ham over low to medium heat for approx. 5 minutes then turn everything off with whipped cream. Let it simmer for another 2-3 minutes and turn off the heat. Sprinkle everything with chopped green parsley and season with salt and pepper if needed.
The cooked pasta (depending on the indications on the package & # 8211 on average between 9-15 minutes) is drained in a sieve. Keep 2-3 drops of water from them. If the mushroom sauce has dropped too much, gradually add 1-2 tablespoons of hot pasta water and mix gently. This stage no longer requires fire. The starch in that water helps the sauce bind. Add the drained pasta to the pan and mix gently with the sauce, so that it does not break.
Appetizer muffins with mushrooms and cheese
- 2 eggs
- 150 grams of natural yogurt
- 50 ml milk
- salt (pepper to taste)
- 50 ml olive oil
- 100 grams of mushrooms

- 1 small bunch of parsley
- 200 grams of white wheat flour
Method of preparation
- Wash the mushrooms and let them drain.
- Separate the eggs: place the yolks in a large bowl. Whisk the egg whites well, together with a pinch of salt.
- Leave the egg whites aside.
- Mix the yolks lightly with the milk, olive oil, yogurt, salt and pepper.
- Add the finely chopped mushrooms, the chopped cheese and the chopped parsley.
- Add the egg whites and mix lightly with a spatula.
- Gradually incorporate the flour, mixing with a spatula, with movements from top to bottom (max. 15 movements).
- Distribute the dough obtained in the muffin tray, lined with special papers.
- Insert the appetizer tray with mushrooms and cheese in the preheated oven and bake approx. 20 min. at a temperature of 200 degrees Celsius (or until they pass the toothpick test, and when touched they are firm and slightly elastic).
- Remove from the pan and leave to cool on one side (do not leave too much).
- After cooling, they can be removed from the special papers (they come off very easily, provided that the papers are of good quality)
- Serve simple or with a yogurt sauce or light cheese sauce, or even tzatziki sauce.
