Take the sour cream and yogurt and heat them over low heat * (great care not to boil) in which we add the yeast to dissolve in this warm composition. Mix the flour with this mixture of heated cream in which the yeast was dissolved with the 3 eggs, salt, butter, 1 tablespoon of sugar and one tablespoon of vanilla sugar. Add the oil lightly while mixing the ingredients.
Cow's or sheep's cheese, with 3 eggs, 3 tablespoons of sugar and a vanilla sugar sachet (if you like less sweet you can put less or not at all if it's telemea), grated peel of a lemon (I usually leave the peel at soaked in vanilla sugar then add it), and raisins, mix well. If the composition is too thin you can add a tablespoon of semolina.
Make the dough squares as in the picture, fill it with the composition, gather the corners in the middle and combine evenly. Grease the pies with beaten egg on top. Line the tray or put parchment paper.
Oven : 180 degrees heated Baking time - 30 min - do not open the oven during baking.
Powder with vanilla sugar after cooling. I make them smaller than in the picture above.
