Dough preparation:

Put the flour in a bowl and put in the middle: lukewarm water, yeast, oil and salt. Knead very well until the dough is elastic but non-sticky. Cover the bowl with a towel and let it rest for about 30 minutes.

  • 1 basic pizza dough base
  • 200g (7oz) tomato pizza sauce
  • 200g (7oz) mozzarella cheese, thinly sliced ​​or chopped
  • 150g (5½oz) gruy & ampegravere cheese, grated
  • 50g (1¾oz) dolcelatte cheese, cut into small cubes
  • 50g (1oz) fresh Parmesan, coarsely grated or shaved
  • 2tsp dried oregano leaves to garnish

Preheat the oven to 220C / gas 7. Roll out the pizza dough to make a 20cm (8in) circle and place on a baking sheet.

Place all the cheeses in a large mixing bowl and lightly toss to mix them up.

Spread the pizza sauce evenly over the base and sprinkle the cheeses over the sauce, distributing evenly. Sprinkle over the oregano and bake for 12-15 minutes until golden and bubbling. Serve hot.

Postup přípravy

Hladkou mouku promíchejte s droždím, přidejte olej a vodu a vypracujte vláčné těsto, které zakryjte utěrkou a nechte na teplém místě nakynout.

Mezitím spařte a oloupejte rajčata. Na oleji zpěňte jemně nasekanou cibuli a česnek, přidejte rajčata a zvolna duste do zhoustnutí, pak vmíchejte kečup, oregano, podle chuti osolte, opepřete a nechte trochu zchladnout.

Vykynuté těsto rozdělte na dva nebo čtyři díly, zakulaťte je a vyválejte na tenké placky, dejte je na plech a nechte trochu nakynout. Pak je potřete rajčatovým pyré, vložte do předehřáté trouby a pečte zvolna asi 10 - 15 minut.

Na placky rozložte nakrájené nebo nastrouhané sýry, na kousky nakrájenou papriku, posypte špetkou oregana a dopečte, až se sýr částečně roztaví.

When Andris Lagsdin, who invented the Baking Steel (kind of a big deal) offered to send me some of his 72 hour dough to try, I was psyched. The 72 hour dough is currently on kickstarter and I can & # 8217t stress enough how perfect it is for someone like me. I won & # 8217t have to feel any more dough-shame just because I don & # 8217t have the kitchen / attention span / time to make dough myself instead of buying it at the store. Homemade dough, delivered to my door? Amen.

Once I knew the 72 hour dough was on its way, I got to planning the toppings I & # 8217d use. I had a hunk of Vermont Creamery goat cheese in my fridge that needed to be used up, so I figured I might as well shoot for the stars and try to recreate Frank Pepe & # 8217s four cheese pizza recipe!

Pepe & # 8217s actually posted this video a while ago which shows their four pizza cheeses being made. This led me to my next adventure- deciding to slice my own mozzarella. At first I used a knife, which was a fail- I couldn't get the cheese slices thin enough. Luckily I remembered I had a cheese slicer like this one laying around the house, which got the job done a lot better. Anyway here & # 8217s the recipe!


Pizza four cheeses

I ordered it at a pizzeria, a little more multisor. But it's worth a try at home.

You make the countertop the way you want it, each one. I have a pizza counter HERE. Then fill it with four kinds of cheese, one of which is mandatory mozzarella. The one in the picture also contains cheese, brie cheese (or other kind of cheese with noble mold) and ricotta.

You can also add other ingredients, such as mushrooms or red peppers, tomato sauce, olives, oregano. Put in the hot oven for 20-25 minutes on a low heat. Serve with ketchup and optionally with garlic sauce.

Method

Begin by warming the flour slightly in the oven for about 10 minutes, then turn the oven off.

Sift the flour, salt, yeast and sugar into a bowl and make a well in the center of the mixture, then add the olive oil and pour in 4 fl oz (120 ml) hand-hot water. Now mix to a dough, starting off with a wooden spoon and using your hands in the final stages of mixing. Wipe the bowl clean with the dough, adding a spot more water if there are any dry bits left, and transfer it to a flat work surface (there shouldn't be any need to flour this). Knead the dough for 3 minutes or until it develops a sheen and blisters under the surface (it should also be springy and elastic).

You can now either leave the dough on the surface covered by the upturned bowl or transfer the dough to a clean bowl and cover it with clingfilm that has been lightly oiled on the side that is facing the dough. Leave it until it looks as though it has doubled in bulk, which will be about an hour at room temperature. Having made the dough and left it to rise, pre-heat the oven to gas mark 8, 450 ° F (230 ° C), along with the pizza stone or baking sheet.

The next stage is to tip the dough back on to a work surface that has been sprinkled generously with polenta to prevent it from sticking. Knock all the air out of the dough and knead it for a couple of seconds to begin shaping it into a ball. Then dust your rolling pin with polenta and roll the dough out to a circle that is approximately 10 inches (25.5 cm) in diameter. Then finish stretching it out with your hands, working from the center and using the flat of your fingers to push the dough out it doesn't need to be a perfect round, but you want it to be a fairly thin-based pizza, with slightly raised edges.

Then, using a thick oven glove, very carefully lift the baking sheet or pizza stone out of the oven and sprinkle it with a little polenta (cornmeal). Now carefully lift the pizza dough on to the stone or baking sheet and quickly arrange teaspoonfuls of ricotta here and there all over. After that, scatter the Mozzarella and Gorgonzola pieces in between and, finally, scatter the Parmesan over.

Bake the whole thing on a high shelf for 10-12 minutes, until the crust is golden brown and the cheese is bubbling. You can lift the edge up slightly to check that the underneath is crisp and brown. Carefully remove the baking sheet or pizza stone from the oven, again using a thick oven glove, and serve the pizza on hot plates straight away.
