A quick-and-easy-to-prepare salad made with mung beans, also called whole green gram. Very colourful, 100% vegetarian and healthy!

  • 200g sprouted mung beans
  • 120g grated carrot
  • 200g pomegranate seeds
  • 15g chopped fresh coriander
  • 30g grated fresh coconut
  • 1 to 2 teaspoons green chilli paste
  • fresh lemon juice, to taste
  • salt to taste
  • 2 teaspoons olive oil (optional)
  • 1/2 teaspoon mustard seeds (optional)
  • 1 pinch asafoetida (optional)

  1. Combine mung beans, carrot, pomegranate, coriander, coconut and chilli paste in a mixing bowl and mix thoroughly.
  2. Just before serving add lemon juice and salt.
  3. Optional: heat 2 teaspoons of olive oil in a small pan. Add mustard seeds and asafoetida. Heat till seeds pop. Pour on the salad and stir well.

Mung beans are small green beans, native to the Indian subcontinent. They're delicious sprouted, as in this salad recipe. To sprout the beans, rinse the beans well till the water runs clear. Place in a bowl, cover generously with water, and let sit overnight. The next day, drain the beans and give them a good rinse. Line a colander or sieve with a clean tea towel; place the beans inside and lightly cover (a bamboo steamer also works well for this). Keep in a cool, dark place out of direct sunlight for 1 to 3 days, until sprouts form. Rinse and drain every 12 hours.

  • dried mint (1 teaspoon), optional
  • ground cumin powder (1/2 teaspoon)
  • red pepper powder (1/8 teaspoon)
  • freshly ground black pepper (1/4 teaspoon)
  • salt (to taste)

Refreshing sprouted mung beans salad with a sweet and salty peach vinaigrette! Healthy, packed with nutrients, and delicious!

Ingredients

  • 1/2 cup ( 100g ) raw mung beans
  • 1 cup ( 30g ) packed baby spinach (or other greens)
  • 1 avocado, diced
  • 1 carrot, cut into matchsticks
  • 1 peach (or two flat peaches), diced
  • 3 – 4 radishes, sliced
  • optional add-ins: sautéed tofu, tempeh, red cabbage, nuts

Peach Dressing

  • 1 large peach (or two flat peaches)
  • 2 tbsp (30ml) olive oil
  • 1 tbsp (15ml) lemon juice
  • 2 tsp (10ml) maple syrup
  • 1 tsp (5ml) balsamic vinegar
  • 1/8 tsp salt
  • 1/8 tsp sriracha (optional)

Instructions

  1. Place the mung beans in a large jar or bowl and let it soak overnight, or for at least 8 hours. Make sure there is enough room as the beans will double in size.
  2. The next day, rinse the mung beans and place them in a jar. Cover with a clean kitchen towel or cheesecloth and let sit at room temperature for 24 hours. After about one day you should see small “tails”. You can now use them or let them sprout for one more day.
  3. To make the salad: to a large mixing bowl, add the sprouted mung beans, baby spinach, diced avocado, carrots, peach, and radishes.
  4. Prepare the peach vinaigrette by blending together the peach (pitted and peeled), olive oil, lemon juice, maple syrup, balsamic vinegar, and salt. You can use a blender or a small food processor.
  5. Pour the vinaigrette into the bowl and toss to combine. Chill in the refrigerator for at least 2 hours before serving.
  6. Leftovers will keep for up to 3 days in the refrigerator.

How to Sprout Mung Beans & Their Health Benefits + Easy Salad Recipe!

Mung Beans are a nutritious legume which can really amp up the nutrients when they’re sprouted. It can be tricky trying to sprout beans though – you don’t want to produce and bacteria or that off smell or taste. I developed a method that resulted in delicious tasting sprouts that are also nutritious!

1. Soak 1 cup of mung beans in water overnight

1. Morning: Rinse the beans in a colander and place them back in bowl

2. Evening: Give the beans a second rinse and move them into jars covered with plastic wrap with holes poked in. This may not provide enough space so if possible use a large bowl.

1. Morning: Give the beans a third rinse in the colander and set aside covered once more. You’ll see they’ve expanded in size and may need a bigger bowl.

2. Evening: Give the beans another rinse and you will now see the sprouts coming in!

1. Give the beans one last rinse and they are now ready to eat! I seasoned mine with 2 tbsp white vinegar, ½ tsp sea salt, and ½ tsp freshly ground black pepper.

Here’s what makes sprouted mung beans so good for you:

  • Good source of Vitamin K which is beneficial for the body’s bone health as well as wound healing
  • Good source of Folate and Iron: these nutrients are important in the body for energy production, immunity and overall good health. Women specifically tend to need these nutrients more, yet it can be hard to get enough of from foods.
  • Sprouted mung beans have 6x more antioxidants than regular mung beans. Antioxidants help reduce the risk of developing chronic diseases.
  • Sprouted mung beans have higher absorption rate of nutrients. So that means, if you were to eat 1 cup of regular mung beans vs. sprouted mung beans, your body will be able to benefit from more of the nutrients in the sprouted version!

Nice nutritious salad.
I have a suggestion : instead of boiling the sprouts in water you can steam the sprouted moong dal in a colander and half cover it with other vessel. It will be more nutritious it will take hardly 3-5minutes only. Its healthy to cook all the vegetables [dont cover it completely leave little place for the steam to escape this will retain the colour of vegetables] in this way or pressure cook, best ways of cooking to retain the maximum nutrition of the vegetables.

we all are found of sprouted moong dal, moth dal and black gram. unfortunately we cant prepare the sprouted as good as they are available in the market. The length of sprouts are not so long. please guide and suggest me. Thanks

Bean sprouts do not have a lot of fiber in them. There are only .8 (point eight) grams – less than 1 gram per serving.

Making ginger juice is easy shred the ginger very fine or I use zester to great the ginger after grating hold the paste between you fingers and squeeze, you will be surprise how easy it is.

Can I skip “Olive Oil”? becoze, i don’t like the raw test any kind of oil, it does not test well, & i have not tried olive oil in any kind of cooking, so i don’t know the test of olive oil, i usually use “Refined Oil”.

Sprouted Mung Bean Salad

1 heaping tablespoon ginger, grated

2 chili peppers, finely chopped (use more or less depending upon your taste)

1/4 cup finely chopped cilantro leaves

In a large bowl, soak mung beans for 12 - 14 hours. Rinse and discard water.

Cover mung beans with a kitchen towel and let it sprout for additional 12-24 hours. Sprouting depends on your mung beans, temperature so it may vary a little bit.

Once you see small sprouts starting to grow, you can refrigerate it and use it as needed.

Combine sprouted mung beans with ginger, chili pepper, salt, pepper, and cilantro leaves. Squeeze lemon juice over it. Taste and adjust seasoning as necessary.

Allow it to sit in the refrigerator for at least 30 minutes before eating as it tastes better.

Sprouting the lentils was easy! I hydrated some dried porcini mushrooms and cooked the lentils in that liquid along with edamame. Chopped up the porcinis and added them. My family loved it, served with filet of sole.

We loved this and could eat it every night! Make sure to buy roasted almonds. I don't think it is necessary to puree the chives.. just chop them in the dressing. We will try that next time. Adding cumin is good.

I used instant brown rice and cooked the rice and the sprouts in the same pan. I've made this twice and the crunchy nuts and dressing make the dish.

Dried organic sprouts are available at Costco in our area. I make something very similar to this using lots of fresh basil and an oil & vinegar dressing - tastes great after the flavors blend for 24 hours.

Had trouble locating the dryed sprouts, so I substituted green lentils, fresh bean, alfalfa, and radish sprouts. Served with Teriyaki and Five spice chicken skewers. I also doubled the recipe and it still was not enough for our family of five, they liked it that much.Would also go well with a good white fish.

My family found this salad *incredibly* bland. The texture was ok, but the flavor was inbelievably boring. Spiced it up with some chopped fresh herbs (I think parsley, mint and basil) and cumin, and it was greatly improved. However, we won't be making this again.

Great easy summer dinner, and impossible to mess up. Random quantities of just about everything seem to work fine. Watch out for the salted nuts though - too much salt for me, Iɽ rather do unsalted and add a little if needed.

I used the scallions, chives, and zucchini from my CSA farm share, as well as fresh sprouted beans and more rice. No need to strain the dressing..I even added a couple of garlic scapes to it. Threw in some tamari almonds and sunflower seeds at the end and a sprinkle of goat cheese. This is a healthy and delicious dish.

This has excellent crunch and taste. Great summer salad. I used a brown rice/wild rice mix and I substituted 3/4 can garbanzo beans for the sprouted mungs because they have been recalled in my area. Made it with Korean short-rib tacos.

This was DELICIOUS. We have access to a great sprout vender at our farmers market, so we actually made this properly and therefore can give an accurate review. Even though my husband complained as I made it that it looked like bird seed, he could not get enough of it when it was done - crunchy, zesty, fresh, and umami, it really had it all!

I also couldn't find sprouted beans, so I used dried mung beans and french green lentils. Very hearty salad. I will probably make this again and add a little more lemon.

I couldn't find dried sprouted legumes so I used the the fresh ones from the produce dept. They probably didn't need to be cooked at all so the salad was not as crunchy as it should have been.I used leftover whole wheat orzo insted of brown rice. My vegan daughter and I liked it the rest of the fam thought is was ok. Def needs more lemon juice. Will try it with the rice and doctor it up a little next time. Different and super healthy!
