Ingredients

  • Nonstick vegetable oil spray
  • 3/4 cup pecan halves (about 3 ounces)

Recipe Preparation

  • Line baking sheet with foil; spray with nonstick spray. Combine sugar, 2 tablespoons water, and cream of tartar in heavy small saucepan. Stir over medium-low heat until sugar dissolves. Increase heat; boil without stirring until syrup is deep amber color, occasionally brushing down sides of pan with pastry brush dipped in water and swirling pan, about 7 minutes. Remove from heat. Immediately stir in pecans. Quickly pour mixture out onto prepared baking sheet. Working quickly and using 2 forks, separate pecans into individual halves. Cool completely. Break candied pecans apart, leaving each pecan half intact with some candied caramel attached. DO AHEAD Can be made 1 week ahead. Store airtight at room temperature.

There are two popular ways to make candied nuts: baked in the oven and cooked on the stovetop. Both methods work nicely for pecans, but the quickest, easiest option is to use the stovetop. The stovetop also makes sure that these candied pecans are vegan and egg-free.

These pecans are so simple, you’ll be able to make them anytime you want. Add these to salads, rice dishes, desserts or enjoy them as a snack. I also love them for adding to cheeseboards. You can play around with the spices to really make them your own, but I love making them sweet and salty.

To make the candied pecans, simply combine sugar (I love using brown sugar) with spices, vanilla extract, and a little water. Heat everything up until it looks like a glaze, and then add the nuts. In this recipe, we are using pecans, but other nuts like walnuts, hazelnuts or cashews will also work.

Stir the nuts around the glaze and cook for a few minutes then transfer them to a baking sheet to cool. Once cool, you might need to break apart few nuts that have stuck together, but other than that, you are ready to enjoy!


  • 1 egg white
  • 1/2 teaspoon pure vanilla extract
  • 8 ounces pecan halves
  • 1/2 cup granulated sugar
  • pinch fine salt
  1. Preheat your oven to 250°.
  2. Separate the egg white from the yolk, keeping the whites in the bowl. Use the egg yolk for another purpose or discard. Firmly whisk the egg whites until frothy. Add in 1/2 teaspoon pure vanilla extract and whisk to combine.
  3. To the vanilla egg whites, add the pecan halves. Toss well to coat.
  4. In a separate bowl, combine the sugar with a pinch of fine salt. Transfer the coated pecans to the sugar, toss until coated with sugar.
  5. Spread the nut mixture out into an even layer on a rimmed sheet pan that has been lined with parchment or a silicone mat.
  6. Bake for 30 minutes on the middle rack of your preheated oven, stirring every 10 minutes.
  7. Allow to cool completely before serving or storing in a glass jar or container with a tight fitting lid.
  8. Pecans should last 2 weeks at the least.

Why are my candied pecans sticky? If the pecans turn out sticky, this means the sugar never reached a high enough temperature to have that hard crack “brittle” coating on the outside. Electric stoves tend to have less heat power and responsiveness as compared to gas stoves, so cook for a few minutes longer if you have an electric stove or a weaker gas stove. Just watch and smell to ensure it doesn’t burn.

How to store candied pecans: Once completely cooled, in an airtight container at room temperature for a week. You can get away with two weeks or longer, but the flavor won’t be as good. They taste best fresh.

Can candied pecans be frozen? Yes, let them cool completely, then store in an airtight container for up to 2 months.

You need several ingredients, but only a little bit of each one. However, if you want to make more, simply double everything.

  • 1 cup of pecan halves
  • 1/4 cup of granulated sugar
  • 1/4 cup of brown sugar
  • 1/4 teaspoon of ground cinnamon
  • 1 tablespoon of water
  • 1 teaspoon of vanilla extract
  • Dash of salt

If you want, you can increase the cinnamon to give it more of a kick.

During the holidays, you can add some red hot candies to make it more festive.

If you add other candies to the sugared pecans, do so after they&rsquove had a chance to cool.

Otherwise, you might wind up with a melty mess that will still taste good. But it won&rsquot look so great.

How to Make Candied Pecans

Making these candied pecans, as I already mentioned, is easy. But make sure you have everything ready because they cook quickly.

You&rsquoll also need to stand in front of your stove for the whole 5 minutes. Walk away, and you&rsquore likely to wind up with a burnt mess.

If you&rsquove ever had this happen, you know that burned sugar is hard to clean up.

For that reason, I like to place the wax paper on a pan and have it ready. Otherwise, you&rsquoll have to scramble to get it set up.

First, in a large skillet, mix everything but the pecans over medium heat.

Dissolve the sugar and bring it to a light boil.

I like to stir it while it heats up to prevent any of it burning on the pan. I&rsquom always thinking about cleanup.

Secondly, stir in the pecans and cook for another 5 minutes, stirring constantly.

Make sure all of the pecans are coated in the sugar mixture. This is super easy if you keep stirring.

Finally, scoop the cooked pecans onto a sheet pan covered with parchment paper or foil, separate them with the spatula, and allow them to cool.

Please be careful and try not to touch them with your bare hands because they will be super hot.

Serve immediately or place in an airtight container for later.

You can eat them by themselves, put them in a recipe, or use them to top your favorite dessert.

I love crumbled candied pecans over vanilla or chocolate ice cream.

Although these pecans have a sugary coating, they still have some health benefits.

Directions

Mix the butter, Truvia Cane Sugar Blend and vanilla.

Easy Candied Pecans Recipe

Lets just start out by saying these Candied Pecans are dangerous! Who knew such simple ingredients could make something so tempting and addictive?

I started making the cinnamon sugar almonds like 10 years ago and I hadn’t even tried any other nut until today. Because I was out of almonds :).

And guess what? I actually like the pecans even better because they have a more delicate and melt-away crunch than the almonds do and they have more cracks and crevices for the sugar mixture to coat.

I basically guarantee if you take these to a party they will be gone in no time. They’re cinnamon caramel flavor coating is insanely delicious. And you’re going to love how quick the prep is.

No candy thermometer required and tending to a hot bubbling syrup, instead here we just coat with a simple mixture and oven bake them for an hour.

Short list of ingredients, simple yet incredible flavor, easy prep – we could all use more recipes like this during the holidays, right? Just try not to eat half the batch before you get around to gifting them (I really have a hard time with that one).


  1. Gather all your ingredients
  2. Melt the butter in a sauce pan over medium heat
